* 6 Eggs
* 3 Table Spoon Margarine/Butter
* 1 lb. Spinach
* 1 big onion
* Salt, black pepper, chili
If, as a wife, you have spent all your day out with friends and could not make anything for dinner, this is one of the excellent quick meals from Turkish Kitchen which would save you from your husband's terror in the dinner time. Oh, it is of unique taste! But it is important to prepare it exactly to the recipe. You will ask "How?" Here it is:
Clean the spinach leaves by taking out the hard and old parts then rinse them thoroughly and cut into small pieces by chopping up. Then put them in a colander to dry. By that time let the margarine/butter melt in a saucepan and mince the onion and then fry these little pieces of onion in that saucepan in which you melted the margarine/butter until their color turn into pink.
When you see your onion pieces are slightly red or pink then it means the time to add the spinach which was left in the colander, together with the salt and black pepper of which amount is up to you. Then start to stir this mixture until it runs out of water.
Now, you are about to finish it, don't be impatient! O.K. you need now a frying pan to put your mixture in. Once you do so, make nests on the surface for the eggs and break them. Set the heat to medium and fry it until white parts are done. You may put the lid on then have the yolks covered white.
Don't forget to put a little chili on top of the yolks.
